(PART – I)
Q.2 Write short answers to following questions.(6×2=12)
i.
Which carboxylic acids are very oftenly used as flavour enhancers?
Ans: Citric acid, tartaric acid and malic acid (organic acids) are often used as flavour enhancers.
ii.
How do ethanol and propanoic acid react?
Ans: They react in the presence of conc. H2SO4 (esterification) to form ethyl propanoate and water:
CH3CH2COOH + C2H5OH ⇌ CH3CH2COOC2H5 + H2O
CH3CH2COOH + C2H5OH ⇌ CH3CH2COOC2H5 + H2O
iii.
Which property of acetic acid does make it suitable to act as preservative in pickle?
Ans: Its acidic nature: it lowers the pH and stops the growth of bacteria and fungi, so the pickle does not spoil.
iv.
What is polyester and how is it formed?
Ans: Polyester is a polymer with many ester links (–COO–). It is formed when a diol reacts with a dicarboxylic acid, repeatedly joining by esterification and releasing water. Example: Terylene (PET).
v.
How does ethanol react with propanoic acid?
Ans: In the presence of conc. H2SO4 as catalyst they form the ester ethyl propanoate and water:
CH3CH2COOH + C2H5OH ⇌ CH3CH2COOC2H5 + H2O
CH3CH2COOH + C2H5OH ⇌ CH3CH2COOC2H5 + H2O
vi.
Give examples of some citrous fruits and the acid they contain.
Ans: Lemon and orange contain citric acid; grapefruit contains citric acid; (grapes contain tartaric acid, apples malic acid).
(PART – II)
Note: Attempt the following question.
Q.3: Describe applications of esters in daily life.(5)
1. Flavours and fragrances: esters give fruity smells and tastes to food, drinks, sweets and perfumes (e.g. methyl butyrate – apple, n-octyl acetate – orange, n-amyl acetate – banana).
2. Solvents: ethyl acetate is used in nail polish remover, paints and lacquers.
3. Synthetic fibres and plastics: polyesters such as Terylene are used for clothes, ropes and PET bottles; cellulose acetate is used for plastics and films.
4. Medicines: methyl salicylate is used in pain-relief balms; aspirin is also an ester.
